
Kisaki 28 has an elegant and rich flavor as it name represents, ”Kisaki” (后) meaning Queen in Japanese. Kisaki 28 is the award winning sake from London Hyper Japan in 2018. It uses "Yamada Nishiki" (山田錦), a kind of King of sake rice, which they cultivate and harvest by themselves very carefully and pick up the best ones. It is said that this Yamada Nishiki rice is so superb that a grower may wants to keep it for themselves.They also use pure water from "Tateyama Renpo" (立山連峰), so-called Japan Alps, which wins a fame of one of the best waters in Japan, to brew this Kisaki.
As its name indicates, 28 means a rice milling rate of 28% which is much lower than 50% criteria to be qualified as Daiginjo, meaning that additional 22% of rice are further polished.
