"GINTEN" (吟天) is named after sake brewer's aspiration to be a top brand of Junmai Ginjo, i.e. GIN (吟) means a spread to a large number of people while TEN (天) means a top or heaven.
A dry Junmai Ginjo brewed with white koji, which is fermented with citric acid to create a sour taste. GINTEN blanc has a smooth taste that doesn't feel sweet, and indulges even a wine lover. It is recommended to pair with French or Italian dishes of seafoods. GINTEN blanc's acidity going down your throat creates a great marriage with seafoods. For example, raw oysters, GINTEN blanc' sourness makes your inside of mouth refreshed and a taste of oysters becomes creamy as a white wine does so. GINTEN is an ultimate pairing sake like white wine.
