The brewing of "Since 1998" started in 1998 with a special red rice. It has been stored for 20 years at 0-1℃ to experience a slow and delicate fermentation until 2018 for the first production of Since 1998.
More than 20 years ago, Mr. Genji Satoh, the previous Toji (Brewery Master) heard a brewing industry rumor that "liquor made from red rice is delicious". Before his retirement, he decided to "make the ultimate sake himself". He began the brewing process using a locally cultivated red rice. This sake was pasteurised once 20 years ago, before being bottled and sealed. Since then, it has been carefully aged in the low temperature storage of the sake brewery, giving a birth of super premium Ginjo vintage sake with a truly miraculous taste.
